Here's a simple rule: for a proper meal, plan for 8–10 pieces per person. As a starter or alongside other food, 4–6 pieces is enough.
A standard maki roll at Tokyo Sushi Station comes in 8 pieces. So for a group of 4 eating sushi as a main meal, you're looking at 4–5 rolls minimum.
